Lettuce is approximately 95% water with very few calories — iceberg lettuce contains only about 10 calories per cup. It provides small amounts of vitamins A, C, and K along with folate and fiber. There are no known toxins in common lettuce varieties.

The crunchy texture of romaine and iceberg lettuce satisfies some dogs who enjoy chewing, without adding meaningful calories. It's particularly useful as a treat for dogs on caloric restriction, as a training reward when calorie budget is tight, or as a food puzzle filling.

Arugula (rocket) has a peppery flavor that some dogs dislike and may cause mild GI irritation in sensitive animals, but is not toxic. Spinach-type greens have the oxalate concern mentioned in the spinach entry — limit those. Standard lettuce varieties have no such concern.
